2017 La Tunella Col Baje
The Col Baje is made with 100% Pinot Grigio grapes which are harvested at the right level of ripeness. La Tunella use Cryomaceration to obtain as much flavour from the grapes as possible (maceration at low temperature). The grapes are subjected to a slow fermentation and aging "sur lies" at a controlled temperature with frequent batonnage in large barrels (30 hl) of Slavonian oak.
The Col Baje is an elegant wine with Intense straw yellow with golden reflections and light coppery nuance. The nose is intense, ample and fruity with notes reminiscent of the sweetness of pear pulp and ripe apricot combined with a background of almond blossoms and delicate floral sensations perfectly integrated with the current of balsamic aromas of the oak in which it is matured. On the palate it is dense and enveloping, persistent and balanced.
Best paired with mushroom dishes, fish and white meats. Excellent also with cold cuts and creamy cheeses.
