The Dolcetto is from 17 year old vines in soil of clay, sand and limestone. After manual harvest the grapes are de-stemmed then fermented for 18 days with their skins in stainless steel tanks, before gentle pressing and then continuing ageing in stainless steel until bottling in April 2018. The Dolcetto is medium bodied with fairly big tannins, flavours of cherry and plum. Pairs well with lamb dishes or even the best quality pizza.
