Castello di Tassarolo Il Castello Gavi DOCG is made with 100% Cortese di Gavi grapes. The vineyard is at 300m above sea level and the soil is marl with clayey silt. Current owners Massimiliana and Henry converted the land to Biodynamics in 2006 developing the vitality of the soil and nurturing the ecosystems within the vineyard in order to bring them back to life. They believe 'good wine is made before it enters the cellar'.
Il Castello is from a vineyard in the hilliest and oldest part of the vineyard that produces grapes of superior quality. After a late harvest, exclusively manual, a slight cryomaceration and a soft pressing aimed to yield up to 60% in must. Fermentation is spontaneous and conducted at a low temperature.
Castello di Tassarolo 'il Castello' Gavi DOCG is a medium-bodied dry white wine that has aromas of honeysuckle, tropical fruit and a whiff reminiscent of crushed tomato vine. The round, enveloping palate delivers mature yellow apple, honeydew and honey, while fresh acidity lifts the rich flavours. It closes on a lemon drop note.
Il Castello Gavi is an excellent aperitif. It goes well with fish dishes, white meats, cheeses, pasta, rice dishes and vegetables. Serve at a temperature of 9-10°C
