2016 Selvadolce Crescendo Plus
Selvadolce Crescendo is made with 100% Pigato grapes. Pigato is Liguria's clone of Vermentino. It has had natural fermentation in Slovenian oak and then has spent 6 months on lees in stainless steel before bottling. The 2013 vintage did not act in its usual way. Fermentation took two years to complete. With perseverance Aris waited for nature to take its course ending in this cracking wine. We have waited a long time for this wine and our small allocation will not last long.
Inspiring winemaker Aris farms his land with minimal intervention and biodynamic principles. The vineyards close proximity to the coast is evident.
