Selvadolce Rebosso plus is a pure Vermentino from the western Ligurian Riviera. Vermentino is a vine that loves the sun and wind and has been present in Liguria for centuries with excellent results. 

The Rebosso frankly and directly expresses the characteristics of its splendid terroir of origin. The Selvadolce vineyard  is located at the end of the Riviera di Ponente, almost on the border with France, in the hilly hinterland of Bordighera. Seven hectares managed under Biodynamic agriculture, inserted in an uncontaminated natural landscape amongst olive trees, dry stone walls and Bougainvillea. The vineyards are cultivated at an altitude of about 150-200 meters above sea level, with a southern exposure. The vines are Guyot-trained with a planting density of 7000 plants per hectare on soils of limestone and clay. The harvest takes place manually, with selection in the vineyard of only of the ripest bunches.

Like the 2016 crescendo the vintage did not act in its usual way, with perseverance, Aris waited for nature to take its course ending in another cracking wine. It has fermented spontaneously in stainless steel vats with the use of indigenous yeasts. The wine ages in cement on lees with batonnage for 32 months and is then bottled without clarification or filtration. A minimum amount of sulphur is added before bottling.

The Rebosso is a Vermentino with intense Mediterranean notes and ripe fruit which perfectly expresses the characteristics of Vermentino. The colour is intense straw yellow. On the nose savoury notes, stone fruit, citrus and wet stone. The palate is savoury with juicy white fruit, almond, marzipan and a chalky texture with good acidity and a long mineral finish.
Best paired with seafood dishes like tuna carpaccio, Spaghetti bottarga, grilled swordfish or perhaps white meat dishes.
