La Tunella Col de Bliss is made from the indigenous grape variety Ribolla Gialla. Ribolla Gialla is an ancient northeastern Italian grape variety planted most widely in the province of Friuli Venezia Giulia. After phylloxera had decimated most of Europe's vines, international grape varieties were preferred but recently revived interest in native grape varieties have given in to new plantings. Ribolla Gialla produces medium-bodied wines with firm acidity, stone fruit and citrus palate.
Harvested at the right degree of maturation, the grapes undergo a cold maceration process at 4° C for about 36 hours, being gently crushed afterwards. The must is then let to cold-settle statically and an indigenous fermentation yeast is prepared in advance (3-4 days before) with the best grapes selected from the same grape variety. It is then allowed to ferment slowly and to refine sur lies at a controlled temperature with frequent batonnages in 30lt Slavonian oak barrels.
The Col de Bliss has a dense cloud of aromas: pineapple, passion fruit and wildflowers along with subtle citrus notes joined in a refined texture. Well-balanced with a deliciously crisp taste finds an elegant mineral outline in a rounded body. Pairs well with seafood and veggies starters, soups and veloutés, main fish dishes with sauces and fried food.
