2008 Fattoria di Piazzano Vin Santo dell'Empolese DOC
San Colombano, Trebbiano Toscano, Malvasia bianca
Fattoria di Piazzano Vin Santo is made from a blend of San Colombano, Trebbiano Toscano, Malvasia bianca grapes. The grapes are left on mats to slowly wither for 4 four months. Fermentation is made in barrels of different woods: chestnut, oak, cherry, acacia, mulberry, where it remains for at least five years. The Vin Santo is then left to refine in bottle for at least six to eight months.
This special Vin Santo has a soft and full-bodied taste with notes of dried fig, apricot and spices. Best paired with dry patissier or blue cheeses.
