100% Nerello Mascalese from 70-110 year old vines in the most prestigious area of the Etna DOC. Guarda il Vento (look at the wind) is a result of the union of mineral components of the lava soils of Etna, the strength of the Sicilian sun and the elegance and concentration of the grapes from the century-old vineyards of Nerello Mascalese. Native Nerello Mascalese ripens late due to the cool climate of the volcano's high altitude. The strong temperature variations between day and night favour the development of the aromatic profile of the grapes bringing complexity, elegance and refinement to the wine.
Guardo il Vento has been fermented in stainless steel and has also undergone malolactic fermentation. It has spent fourteen months in 2nd use French oak barriques. Transparent strawberry red in colour 'Guarda il Vento has delicate and elegant aromas of red fruits and mineral notes, characteristic of the Etna terroir. Paolo's restrained use of oak makes for a harmonious wine with delicate tannins and good acidity.
